Fermentation in oak barrels, followed by the "sur lies" method (contact of wine with dead yeast) for a few months. It can be aged for 2-3 years. Golden yellow colour with a few strokes of green. Discreet presence of wood on a citrus background and an elegant whole, with balance, thickness, good acidity and lengthy finish. Ideal companion for fish, white meat, white spicy sauces, smoked cheese and smoked salmon. Served at 12° C.
